Chipotle to start testing cauliflower rice

Chipotle Mexican Grill will be testing cauliflower rice at 55 locations, reports CNN.

The chain will begin offering the option Wednesday, July 15, 2020, at 55 stores in Denver and Wisconsin.

Cauliflower rice, which is essentially shredded cauliflower, has become a popular alternative to traditional grain based rice, which is higher in carbs and lower in fiber.

The alternative typically has much less net carbs thanks to increased fiber in the vegetable.

Like its existing brown and white rice offering, the cauliflower rice will be flavored with cilantro and lime.

Chipotle has added two other diet conscious offerings to menus nationwide in recent years — a keto, paleo and Whole30 friendly carne asada steak option and vegan sofritas made from organic plant based protein.

Despite its growing attention from nationwide chains, Chipotle leadership has said it doesn’t expect to launch an Impossible or Beyond Meat like alternative because it considers them overly processed.
